L’azienda agricola Nicola Monterisi si dedica alla produzione di oli Extra Vergine d’Oliva pregiati fin dalla metà dell’Ottocento. Piccola realtà del panorama agroalimentare pugliese, sorge in una terra da sempre votata alla coltura dell’olivo, situata a mezza collina tra la bassa Murgia e il mare Adriatico, nel comune di Andria - BT (Barletta-Andria-Trani). La struttura dispone di più di 3 ettari di oliveto specializzato, dove sono messe a dimora 840 piante di sola varietà Coratina con sesto di impianto tradizionale, ventilati dalle brezze salmastre che, indirettamente, proteggono naturalmente dagli attacchi della mosca. Nell'ultima campagna olearia sono stati raccolti 235 quintali di olive, che hanno consentito di produrre circa 35 ettolitri di olio extravergine.
Dal 1992 l’azienda, vocata al BIOLOGICO da svariati anni, è diretta con impegno e risultati da Nicola Monterisi, che porta avanti con capacità la tradizione familiare della passione per l’olio Extra Vergine d’Oliva. Perito agrario d’esperienza, assaggiatore e selezionatore di oli fin dal 1996, nel 2004 completa le sue già vaste competenze con un master in Elaiotecnica, volto a valorizzare ancora di più il suo olio attraverso l’impiego di tecnologie e metodi d’estrazione sempre più avanzati.
L’azienda agricola Nicola Monterisi produce oli per palati raffinati, per soddisfare il gusto di un consumatore sempre più attento ed esigente, che sappia riconoscere il valore della genuinità e dell’eccellenza. La missione dell’azienda è privilegiare la qualità alla quantità, realizzando un olio d’oliva sempre all’altezza delle aspettative di intenditori e buongustai.
Monocultivar prodotta: Coratina
Tecnica di estrazione: le olive sanissime di Coratina, raccolte al momento giusto portano alla frangitura tutto il loro contenuto aromatico ed antiossidante. I dati dei polifenoli a livelli stellari lo documentano. La bassa temperatura di gramola a 24 °C ed un frantoio tecnologico a ciclo continuo e gramole chiuse garantiscono una estrazione esente da difetti e ossidazioni non volute, mantenendo integre le caratteristiche organolettiche tipiche della Cultivar Coratina. I riconoscimenti di questa piccola ma pignola produzione sono tutti ben dati. Indubbiamente una azienda ben condotta basata sulla conoscenza che il mercato premia.
Sensoriale: Si offre alla vista di un bel colore giallo dorato intenso con caldi riflessi verdolini, limpido; all'olfatto si apre complesso e avvolgente, dotato di armoniche note vegetali di carciofo, cicoria selvatica e lattuga, arricchite da sottili sentori speziati di pepe nero. In bocca è fine e di personalità, caratterizzato da toni di ortaggi freschi di campo e spiccate note balsamiche di menta, basilico e salvia. Amaro potente e piccante presente e ben armonizzato, erba stropicciata tra le mani, cicoria bollita, rucola cruda e pepe nero, piccante irraggiungibile, armonico ed esaltante, come deve essere in una vera Coratina.
Batrocera Oleae (mosca dell’olio): assente per l'altitudine e la ventilazione del Mar Adriatico.
Sesto di impianto: il tradizionale del luogo inferiore a 200 piante/ha.

Profumi principali: Erba strappata, cicoria, rucola cruda

Amaro (pregio): prepotente
Abbinamenti: piatti della tradizione pugliese alla griglia, le verdure amare e saporite come cicoria e rucola ed i formaggi  freschi e maturi del territorio. È eccellente su antipasti di tonno, verdure marinate, insalate di farro, zuppe di funghi porcini, primi piatti con pesce spada, pesci di scoglio al cartoccio, carni rosse e cacciagione alla brace e formaggi stagionati a pasta filata

The farm Nicholas Monterisi is dedicated to production of high quality extra virgin olive oils since the mid-nineteenth century. Small view of the reality of Apulian food, always located in an area devoted to olive tree, located halfway between the Murgia hills and the Adriatic Sea, in the town of Andria (Bt). The property has more than 3 hectares of specialized olive grove, where they planted 640 trees with only one sixth of Coratina traditional system, ventilated by breezes salt and, indirectly, of course, protect against attacks of the fly. Oil in the last campaign were collected 235 tons of olives, which have allowed us to produce about 35 liters of extra virgin olive oil.
Since 1992, the company is direct engagement and results Monterisi Nicholas, who continues the family tradition with a capacity of passion for the extra virgin olive oil. The farm produces Nicola Monterisi gourmet oils, to suit the taste of a more careful and demanding consumer, that recognizes the value of authenticity and excellence. The mission is to focus on quality over quantity, always carrying an olive oil up to the expectations of connoisseurs and gourmets.
Monocultivar produced: Coratina Extraction technique: the most wholesome of Coratina olives, harvested at a 10% veraison, very low to the habits of his area, leading to crushing all their aromatic content and antioxidant. The data on levels of polyphenols stellar document it. The low temperature of 24 ° C and kneading a mill technology as Pieralisi guarantee a continuous cycle extraction wonderful, rich fragrances of herbs is sometimes given as little taste.
